I know I’m not the only person who spends hours scrolling through potential food creations on Pinterest! In fact, I have been for years. I only started actually attempting these pins in 2013/2014 and I wish I had documented more of my journey with it then!
I recently brought up a fun one to try to Bubba and he said he’d make it happen. And he did. I can’t seem to insert the actual pin into the post like I’d like to — I’ll have to look into how to do that! So I guess for this post we’re doing this manually.
I’m a sucker for a really good baked potato. I’ve always loved them, they were my go to post workout meal when I did kickboxing in college for years. I don’t know why but it was just super satisfying. Followed by a strawberry shortcake sundae. Don’t judge.

Seems easy enough to replicate, right? I wasn’t able to take photos of the process since Bubba was making them for Valentine’s Day dinner.
We also forgot to get foil so we had to nuke the potatoes in the microwave which I’m normally against but it actually came out pretty decent this time around!
Mine didn’t come out exact since I loaded mine with lettuce and LOTS of tomatoes but I promise there is cheese and meat in there somewhere!
And MAN was this DELICIOUS! I loved it! I have no idea why I didn’t think about doing this sooner! But I’m excited to try more things from Pinterest.
And hopefully I’ll document the process a little better next time!
